Our esteemed client, a distinguished Afro fusion restolounge in Kate, Lagos, is seeking a highly skilled Sous Chef to serve as the second-in-command within a professional kitchen environment. In this pivotal role, you will report directly to the Head Chef and assume full responsibility for kitchen operations during their absence. Candidates must possess either a certification from a reputable culinary institution or prior experience in a fine dining setting to be considered for this position.
What you will do:
Assist the Head Chef in managing the kitchen’s daily operations throughout all service periods, ensuring efficiency and coordination across all shifts.
Assume primary responsibility for kitchen operations in the absence of the Head Chef, ensuring adherence to established standards at all times.
Oversee, mentor, and cultivate the skills of junior kitchen personnel to ensure uniform excellence throughout each service period.
Prepare all dishes meticulously according to the Head Chef’s established standards, ensuring unwavering adherence to quality and presentation without exception.
Collaborate on crafting menus, designing seasonal specials, and evaluating new dishes.
Oversee food preparation processes, ensure accurate portioning, and maintain high standards in plating presentation across all kitchen stations.
Oversee the precise management of kitchen inventory by conducting thorough stock counts, coordinating orders, and monitoring waste levels to maintain optimal supply levels.
Develop accurate and prompt reports detailing stock levels, kitchen expenditures, and daily operational activities for managerial evaluation.
Ensure adherence to rigorous hygiene, cleanliness, and food safety protocols among all kitchen staff members.
You must maintain an onsite presence for at least five days each week.
What we are looking for:
A formal qualification from an accredited culinary institution is an essential prerequisite for this role.
Candidates must possess a minimum of five years of professional kitchen experience, including at least two years in a Sous Chef or advanced line cook position.
Candidates must have a demonstrated background in fine dining establishments, as this experience is essential rather than optional.
Adept understanding of Afro fusion culinary traditions coupled with a sincere passion for the concept.
Experienced in leading kitchen operations autonomously while ensuring adherence to established standards in the Head Chef’s absence.
Accomplished reporting capabilities are essential, enabling precise monitoring of inventory levels, cost analysis, and kitchen efficiency metrics.
Demonstrates strong leadership skills in directing a kitchen team with unwavering confidence, clear communication, and consistent performance standards.
Demonstrates meticulous attention to detail in all aspects of food preparation, presentation, and adherence to hygiene standards.
Maintains composure and concentration amidst high-volume service demands.
Proficient in kitchen costing, stock management, and waste control practices.
Enjoys working collaboratively while effectively receiving and implementing guidance with accuracy and precision.
