Our client, a distinguished Afro fusion restolounge in Kate, Lagos, is seeking a highly skilled Sous Chef to serve as the second-in-command in a professional kitchen environment. The ideal candidate must demonstrate technical expertise, strong discipline, and the ability to assume full responsibility for kitchen operations in the absence of the Head Chef. Candidates must possess a qualification from a reputable culinary institution and prior experience in a fine dining setting to be considered for this role.

What you will do:

Provide assistance to the Head Chef in overseeing the kitchen’s operations during all service periods.

Assume full responsibility for kitchen operations in the Head Chef’s absence, ensuring adherence to established standards at all times.

Develop and oversee junior kitchen team members to ensure uniform quality standards are upheld throughout all service periods.

Prepare all dishes meticulously according to the Head Chef’s precise standards, ensuring no compromise in quality or presentation.

Collaborate on the creation of menus, crafting seasonal specials, and evaluating new dishes through rigorous testing.

Oversee food preparation processes, ensure accurate portioning, and maintain consistent plating standards across all stations.

Oversee kitchen inventory with precision, encompassing stock counts, procurement, and waste tracking to ensure optimal supply levels and efficiency.

Prepare comprehensive reports detailing stock levels, kitchen expenditures, and daily operational activities for managerial assessment on a timely basis.

Ensure that all members of the kitchen team adhere strictly to hygiene, cleanliness, and food safety protocols throughout daily operations.

Must maintain an onsite presence for a minimum of five days each week.

What we are looking for:

A formal qualification from an accredited culinary institution is a strict prerequisite for this role.

Requires a minimum of five years of hands-on kitchen experience, including at least two years in a leadership position such as Sous Chef or senior line cook.

A minimum of three years’ experience in upscale dining establishments is essential. This criterion is non-negotiable and must be met by all applicants.

Demonstrates a deep understanding of Afro fusion cuisine and a strong passion for the culinary concept.

Able to operate the kitchen autonomously while upholding established standards in the Head Chef’s absence.

Demonstrated proficiency in reporting, including precise tracking of inventory levels, cost management, and overall kitchen performance metrics.

Demonstrates the capacity to direct a kitchen team with unwavering confidence, clear communication, and consistent performance.

Ensures meticulous attention to detail in all aspects of food preparation, presentation, and hygiene standards.

Maintains composure and concentration amidst the demands of high-volume service environments.

Possesses a solid grasp of kitchen costing principles, efficient stock management strategies, and effective waste control measures.

Thrives in a collaborative work environment while effectively receiving and implementing clear instructions with precision.
