What you will do:
Assist the Head Chef in managing daily kitchen operations throughout all service periods.
Craft and present fusion dishes inspired by Afro and global culinary traditions, ensuring exceptional quality and adherence to high standards throughout preparation and execution.
Assume full responsibility for kitchen operations in the Head Chef’s absence, ensuring unwavering quality and maintaining operational efficiency without interruption.
Collaborate in the creation of innovative dishes and seasonal menu revisions that embody the restaurant’s distinctive fusion concept.
Oversee kitchen inventory management, encompassing stock level monitoring, procurement of supplies, and tracking of waste.
Oversee portion control, food preparation, and plating procedures at every station to maintain consistency and adherence to standards.
Responsibilities include providing instruction and mentorship to junior kitchen personnel regarding proper culinary techniques, established standards, and adherence to food safety protocols.
Ensure the kitchen is consistently maintained in a state of impeccable hygiene and cleanliness at all times.
What we are looking for:
Requires a minimum of three years of professional kitchen experience, including direct involvement with fusion cuisine, encompassing both Afro and international culinary styles.
A culinary school credential is beneficial, though substantial hands-on experience may also be taken into account.
Proficiency in a wide range of ingredients, culinary methods, and flavor dynamics spanning various global cuisines is essential.
Consistently maintains accurate inventory records, oversees stock control procedures, and generates detailed kitchen reports.
Demonstrates the capacity to assume full leadership of the kitchen with autonomy when necessary.
Demonstrates meticulous attention to detail in ensuring food quality, presentation, and hygiene standards are consistently met.
Maintains composure, concentration, and effectiveness amid high-pressure service environments.
A collaborative professional who effectively follows instructions and enhances the kitchen environment with a positive attitude.
