What you will do:
Assist the Head Chef in managing the daily kitchen operations throughout all service periods.
Craft and deliver innovative fusion dishes, blending Afro-inspired and international culinary traditions, while maintaining an unwavering commitment to excellence.
Oversee the kitchen operations in the Head Chef’s absence, ensuring the maintenance of quality standards and operational efficiency.
Collaborate on the creation of innovative dishes and seasonal menu revisions that embody the restaurant’s fusion concept.
Oversee kitchen inventory management by monitoring stock levels, placing orders as necessary, and meticulously tracking waste to maintain efficiency and minimize costs.
Ensure consistent adherence to portion sizes, meticulous food preparation, and precise plating standards across every station.
Provide instruction and mentorship to junior kitchen personnel regarding proper culinary techniques, established standards, and food safety protocols to ensure compliance and operational excellence.
Ensure impeccable cleanliness and strict adherence to hygiene protocols throughout the entire kitchen environment at all times.
What we are looking for:
Minimum three years of professional kitchen experience is required, specifically in fusion cuisine that blends Afro and international culinary traditions.
A degree or diploma from a recognized culinary institution is preferred; however, equivalent practical experience in a professional kitchen will be thoroughly evaluated.
Proficient in a wide range of ingredients, culinary methods, and flavor profiles spanning various global cuisines.
Accurate in overseeing inventory management, maintaining precise stock control, and providing detailed kitchen reports.
Capable of directing kitchen operations with authority and autonomy when necessary.
Meticulous focus is required to ensure excellence in food quality, presentation, and hygiene standards.
Remaining composed, attentive to detail, and highly productive even amid high-pressure service demands.
