Our client, a high-end Afro fusion restolounge located in Kate, Lagos, is seeking a Sous Chef who demonstrates technical precision, strong discipline, and the ability to serve as the kitchen’s second-in-command. In this role, you will report directly to the Head Chef and assume full responsibility for kitchen operations during their absence. Candidates without a recognized culinary qualification or prior experience in a fine dining setting need not apply.
What you will do:
Assist the Head Chef in overseeing the kitchen’s daily operations throughout all service periods.
When the Head Chef is absent, assume comprehensive responsibility for all kitchen operations while ensuring uncompromising adherence to established standards.
Oversee and mentor junior kitchen personnel, fostering their growth while ensuring uniform standards of excellence throughout each service period.
Prepare all dishes meticulously in strict adherence to the Head Chef’s established standards, ensuring uncompromising quality and impeccable presentation without exception.
Contribute to the creation and refinement of menus, including seasonal offerings and innovative culinary creations, by participating in the evaluation and testing of new dishes.
Prepare and oversee the preparation, accurate portioning, and meticulous plating of food across all kitchen stations to ensure consistency and adherence to established standards.
Oversee kitchen inventory with precision, handling stock counts, procurement, and waste management meticulously.
Prepare comprehensive, accurate reports detailing stock levels, kitchen expenditures, and daily operational activities for managerial evaluation in a timely manner.
Maintain rigorous hygiene, cleanliness, and food safety protocols throughout all kitchen operations.
You must maintain a physical presence at the workplace for a minimum of five days each week.
What we are looking for:
A formal qualification from an accredited culinary institution is essential and non-negotiable.
Professional kitchen experience spanning a minimum of five years is required, including at least two years in a Sous Chef capacity or a senior line cook position.
Must possess a demonstrated background in fine dining establishments, as this experience is essential rather than optional.
Demonstrates a deep understanding of Afro fusion cuisine and a sincere passion for its innovative approach.
Capable of operating the kitchen autonomously while upholding established standards during the Head Chef’s absence.
Demonstrated proficiency in creating detailed reports, meticulously monitoring inventory levels, tracking expenses, and evaluating kitchen operational performance with precision and accuracy.
Capable of guiding a kitchen team with unwavering confidence, precision, and dependable consistency.
Meticulous attention is required for food preparation, presentation, and hygiene standards.
