Our esteemed client, a distinguished Afro fusion restolounge situated in Kate, Lagos, is in search of a Sous Chef who demonstrates technical proficiency, unwavering discipline, and the capability to function as the second-in-command within a high-caliber kitchen environment. In this role, you will report directly to the Head Chef and assume complete responsibility for kitchen operations during their absence. Applicants must possess either a recognized culinary school qualification or prior experience in a fine dining setting; submissions from those lacking these credentials will not be considered.

What you will do:

Assist the Head Chef in managing the kitchen’s daily operations seamlessly throughout all service periods.

Ensure seamless kitchen operations during the Head Chef’s absence by upholding all established standards with unwavering consistency.

Oversee, mentor, and cultivate the growth of junior kitchen team members to ensure uniform standards of excellence are upheld throughout every service period.

Prepare all dishes meticulously in strict adherence to the Head Chef’s exacting standards, ensuring unwavering commitment to both quality and presentation without exception.

Contribute to the creation and refinement of menus, including seasonal offerings and innovative dishes, by participating in taste tests and evaluations.

Ensure consistent monitoring of food preparation, precise portioning, and accurate plating at every station.

Ensure precise management of kitchen inventory by maintaining accurate stock counts, overseeing procurement orders, and diligently tracking waste to optimize efficiency and cost control.

Prepare comprehensive and punctual reports detailing stock levels, kitchen expenditures, and daily operational activities for management’s assessment.

Enforce hygiene, cleanliness, and food safety standards across the entire kitchen team.

You are required to maintain an onsite presence for a minimum of five days each week.

What we are looking for:

A recognized culinary school diploma is an essential prerequisite for this position.

Seeking a candidate with at least five years of hands-on experience in professional kitchens, including a minimum of two years in a Sous Chef or senior line cook position.

Seeking candidates with a demonstrated background in high-end dining establishments, as this expertise is essential to the role.

Passionate about Afro fusion cuisine with a deep understanding of its principles and techniques.

Capable of operating the kitchen autonomously while upholding quality standards in the Head Chef’s temporary absence.

Proficient in generating detailed reports, meticulously monitoring inventory levels, tracking associated costs, and evaluating kitchen performance with precision and accuracy.

Capable of confidently, clearly, and consistently guiding and managing a kitchen team.

Demonstrates meticulous attention to detail in food preparation, presentation, and hygiene standards.

Exhibits composure and unwavering attention to detail even in fast-paced, high-demand service environments.

Accomplished in financial oversight for culinary operations, including inventory valuation, procurement tracking, and minimizing operational waste.

A strong capacity for teamwork, coupled with the ability to receive and implement instructions with precision and effectiveness.
