Our client, a distinguished Afro fusion restolounge situated in Kate, Lagos, is seeking a Head Chef whose expertise is underpinned by formal culinary training and a truly innovative culinary perspective. What you will do:
Craft the complete menu, from initial concept through final execution, with a foundation in Afro-fusion cuisine.
Craft innovative dishes, seasonal specials, and immersive tasting experiences that showcase creativity and rich cultural influences.
Guide and develop the culinary team to ensure uniform excellence in every dish served, fostering a high-performance environment through effective leadership and structured training initiatives.
Establish a framework of discipline, accountability, and ongoing enhancement within all kitchen personnel to foster consistent performance and operational excellence.
Lead regular training programs designed to enhance the team’s proficiency in techniques, industry standards, and newly introduced menu offerings.
Oversee kitchen inventory with precision, encompassing stock tracking, procurement, vendor management, and minimizing waste.
Prepare comprehensive and prompt reports regarding kitchen performance, food costs, stock levels, and operational challenges for managerial assessment.
Responsible for managing food costing, overseeing kitchen budgets, and ensuring menu profitability, working in coordination with the restaurant manager.
Uphold rigorous standards in food preparation, presentation, hygiene, and portion control to ensure consistency and excellence.
Maintain strict adherence to all food safety and health regulations consistently throughout all operations.
Requires onsite presence in the kitchen for a minimum of five days each week, emphasizing direct, hands-on leadership rather than remote supervision.
What we are looking for:
A recognized culinary school’s formal qualification is an essential requirement for this role. This criterion is mandatory and cannot be waived.
Minimum seven years of professional kitchen experience is required, including a minimum of three years in a Head Chef or Executive Chef position.
Demonstrates extensive experience in Afro fusion cuisine, accompanied by a robust, well-documented collection of original menu concepts.
Exceptional leadership and team development capabilities, demonstrated through the successful assembly and nurturing of high-functioning kitchen staff.
Demonstrates exceptional aptitude for training, with a proven track record in onboarding and advancing the skills of kitchen personnel across all levels.
Accomplished reporting capabilities are required, enabling precise and reliable monitoring of expenditures, inventory levels, and kitchen efficiency metrics on an ongoing basis.
Possesses a comprehensive grasp of food costing, kitchen budgeting, and stock control methodologies.
A strong enthusiasm for innovation, coupled with the capacity to challenge conventional limits while maintaining fidelity to the core idea.
Maintaining meticulous standards regarding cleanliness, personal presentation, and professional discipline is essential for success in this role.
Demonstrates resilience and composure in fast-paced, high-pressure service environments while maintaining consistent performance standards.
