Our client, a distinguished Afro fusion restolounge situated in Kate, Lagos, is in search of a Sous Chef who combines technical precision, unwavering discipline, and the ability to function as the principal deputy in a high-caliber kitchen. This role entails close collaboration with the Head Chef while assuming full responsibility for kitchen operations during their absence. What you will do:
Assist the Head Chef with the operational management of the kitchen throughout all service periods.
Ensure seamless kitchen operations in the Head Chef’s absence by upholding consistent standards without compromise.
Oversee, mentor, and enhance the skills of junior kitchen personnel to uphold uniform standards of excellence throughout all service periods.
Prepare all dishes meticulously in strict adherence to the Head Chef’s established standards, ensuring uncompromising quality and impeccable presentation.
Contribute to the creation of menus, the introduction of seasonal specials, and the evaluation of new dishes.
Ensure strict adherence to food preparation standards, maintain precise portion control, and oversee the meticulous presentation of dishes at every station.
Oversee kitchen inventory with precision, handling stock counts, procurement, and waste monitoring to ensure optimal resource utilization.
Prepare accurate, well-organized reports detailing inventory status, food costs, and daily operational activities for review by management in a prompt manner.
Ensure that all members of the kitchen team adhere to rigorous hygiene, cleanliness, and food safety protocols at all times.
You must maintain a physical presence at the worksite no fewer than five days each week.
What we are looking for:
A recognized culinary school diploma or certification is mandatory for this role.
Requires a minimum of five years of professional kitchen experience, including at least two years in a Sous Chef or senior line cook position.
We require demonstrated expertise in fine dining establishments, as this experience is essential to the role.
Proficiency in Afro fusion culinary techniques and a deep passion for its innovative concept are essential.
Able to operate the kitchen autonomously while upholding established standards without direct supervision from the Head Chef.
Accomplished in delivering detailed reports, with a sharp focus on monitoring inventory levels, analyzing costs, and evaluating kitchen efficiency with precision.
Capable of directing a kitchen team with assurance, precision, and reliability.

Able to maintain composure and focus amidst high-pressure, high-volume service environments.
