Our client, a distinguished Afro fusion restolounge located in Kate, Lagos, is in search of a Sous Chef who combines technical expertise, discipline, and the capacity to serve as the kitchen’s second-in-command. This role involves direct collaboration with the Head Chef while assuming full operational responsibility in their absence. Candidates must possess either a qualification from a reputable culinary institution or prior experience in a fine dining establishment to be considered for this position.

What you will do:

Assist the Head Chef in managing daily kitchen operations across all service periods.

Ensure seamless kitchen management in the Head Chef’s absence, upholding uncompromising standards at all times.

Supervise, mentor, and coach junior kitchen staff to ensure the maintenance of consistent service quality throughout all operations.

Deliver all culinary preparations with unwavering adherence to the quality and presentation benchmarks established by the Head Chef, maintaining flawless execution without exception.

Contribute to menu design, introduce seasonal specials, and evaluate new dishes through rigorous testing.

Oversee food preparation processes, ensure adherence to portion sizes, and verify proper plating standards at every station.

Oversee kitchen inventory with precision, encompassing stock counts, procurement, and waste management.

Prepare accurate, well-structured reports on inventory levels, kitchen expenditures, and daily operational activities for managerial assessment.

Ensure strict adherence to hygiene, cleanliness, and food safety protocols throughout all operations of the kitchen team.

To ensure consistent availability and engagement, you must maintain an onsite presence at least five days each week.

What we are looking for:

A formal qualification from an accredited culinary institution is an essential requirement for this position.

Seeking a candidate with a minimum of five years of professional kitchen experience, including at least two years in a Sous Chef or senior line cook position.

Extensive background in high-end dining establishments is essential, as this role demands prior experience in fine dining environments.

Demonstrates a strong mastery of Afro fusion culinary techniques and a deep, authentic passion for this innovative cuisine style.

Capable of independently overseeing kitchen operations and upholding established standards in the absence of the Head Chef.

Accomplished in generating detailed reports, with a keen aptitude for monitoring inventory levels, tracking expenditures, and evaluating kitchen productivity with precision.

Demonstrates the capacity to guide and manage a kitchen team with unwavering confidence, clear communication, and steadfast consistency.

Demonstrates meticulous attention to detail in all aspects of food preparation, presentation, and hygiene standards.

Maintains composure and concentration amidst demanding, high-volume service environments.

Demonstrates a strong grasp of kitchen costing principles, inventory management strategies, and waste reduction techniques.

Accomplishes tasks with precision while adhering to instructions, demonstrating adaptability in collaborative environments.
