What you will do:
Assist the Head Chef in managing daily kitchen operations throughout all service periods.
Craft innovative fusion dishes that blend Afro-inspired and international culinary traditions while maintaining uncompromising quality standards.
Oversee all kitchen operations in the Head Chef’s absence, ensuring the maintenance of high standards and efficient workflow without any compromise in quality or speed.
Collaborate with the culinary team to create innovative dishes and refresh the seasonal menu, ensuring they showcase the restaurant’s unique fusion concept.
Oversee kitchen inventory management, encompassing stock level monitoring, procurement of supplies, and systematic tracking of waste to ensure operational efficiency.
Oversee portion management, food preparation, and presentation standards across every station to ensure consistency and adherence to guidelines.
Provide instruction and mentorship to junior kitchen personnel regarding proper techniques, established standards, and food safety protocols to ensure operational excellence and compliance.
Ensure the kitchen remains immaculate and adheres to stringent hygiene protocols at all times.
What we are looking for:
Requires a minimum of three years of practical kitchen experience, encompassing direct involvement with fusion cuisine, specifically Afro and international styles.
A qualification from a culinary institution is beneficial, while substantial and demonstrated practical experience may also be taken into account.
Possesses extensive expertise in a wide array of ingredients, culinary methods, and flavor combinations spanning various global cuisines.
Demonstrates strong proficiency in inventory management, stock control, and kitchen reporting processes.
Proven capability to assume sole responsibility for kitchen operations, demonstrating strong leadership and autonomy when necessary.
A meticulous focus on food quality, presentation standards, and hygiene protocols is essential.
Maintain composure, concentration, and productivity even when service demands peak.
